Creton and Ployes
Makes approximately 7 pints
4-5lbs. pork cut into small pieces
2tbs. chicken stock
1/4 tsp. Accent spice
1tbs. seasoned salt
1/8 tsp. black pepper
1 rounded tbs. cinnamon
1 tsp. allspice
3 large onions chopped
Bouchard's ploye Mix
Place pork in large pot and fill with water to just below the meat-line. Add seasoned salt,pepper,and chicken broth. Boil for 2 to 2 1/2 hours. Check meat. If cooked through, strain meat from liquid and set aside to cool. Set aside one quarter of the juices to be added later.In the remaining three quarters of the juices, add onions, cinnamon, and allspice.Bring to a boil, while stirring constantly. Reduce temperature and simmer for a half hour. While the onions simmer, grind the pork. Add the ground pork back to the pot. Add more of the juice as needed. Make ployes according to package directions, Place stack of ployes under towel to keep warm. Spread creton on ployes, roll if desired, and serve.
1 cup Ployes mix to make 6 Ployes (7" diam.)
1 tbsp. butter
1 medium onion, sliced thin (2/3 cup)
7-10 mushrooms, thick slices (2 cups)
1 cup each broccoli & cauliflower - bite-sized florets
Salt and Pepper to taste
Sauté onion and mushrooms in butter. Add garlic, cauliflower and broccoli, cook until florets are almost cooked through. Cook ployes and keep warm. Spoon about 1/2 cup filling in center of each ployes and roll up or fold over. Laddle cheese sauce over each serving.
1/2 cup milk
4 oz. sliced processed American cheese
In a pan over medium heat, stir above ingredients until cheese is melted and mixture is smooth.
1-1/2 cups Ployes mix to make 10 ployes (7" diam.)
1 cup Monterey Jack cheese, grated
2 cups refried beans
1 cup chopped onions
Cook Ployes, and keep warm. Place 2 Tbsp. refried beans lengthwise in middle of each ployes. Top with grated cheese and chopped onions. Roll ployes and place side by side in a lightly oiled 9 X 12 casserole. Microwave on high for 1 minute or until cheese melts- or bake in 350° oven for 20 minutes. To serve, cover with salsa and top with sour cream.
Prepare ployes as directed, make them a little bigger 7-8 inches, stack in a plate and set aside.
1 lb. Ground beef
1 package taco seasoning mix
2 diced tomatoes
1 diced onion
1 cup shredded lettuce
1 cup shredded cheddar cheese
1 container sour cream
Brown ground beef, drain and add taco seasoning mix and prepare as directed on package. Place ployes on plate and add 2 Tbsp. of meat filling lengthwise in middle of ployes. Add cheese, tomato, onions, and lettuce. Roll or fold over and top with sour cream.
