Ployes are a French Acadian flatbread used in many different ways the more popular being buckwheat pancakes and crepes. Ployes are made with buckwheat flour, wheat flour, aluminum-free baking powder, and salt. Ployes have a much lighter consistency than pancakes making them easy to fill with anything from fruit to ground meat. Some even use them to make burritos or soft tacos. They are healthy and tend to digest more slowly leaving you feeling full longer, and curbing the urge to snack. They are so easy to prepare: just add water, let sit for five minutes and cook on a hot non-stick skillet or electric griddle.
