Bring on the fall with these moist, warm treats.
Cream together sugar and oil add eggs and pumpkin and mix well. Beat in buckwheat flour, salt, baking powder and cinnamon. Stir in the walnuts. Fill each muffin tin 2/3 full and bake at 350 degrees for approximately 25 minutes.
Optional: Raisins or chocolate chips can replace walnuts. Also 1 1/4 cup applesauce can replace pumpkin.
